Filipino Chicken Adobo Recipe

Ingredients
  • 1 whole frying chicken or 3lbs breast & drumstick parts chopped in 2-3in pieces

  • 1 cup Soy Sauce

  • 1 cup distilled Vinegar

  • 4 garlic cloves minced

  • 2 tsp honey

  • 2 Bay leaves

  • 3 tbls canola or veggie oil

  • pepper to taste
  • Put all ingredients (except minced garlic & oil) in a pot, burners on high heat until liquid simmers.

    Pull out all the chicken pieces and pour liquid in a container for later.

    Lower heat to medium flame, add oil, garlic and chicken pieces back into the pot and brown.

    Pour remaining liquid and adjust heat to low. Simmer for 30 minutes or until liquid turns into a slightly thicker consistency.
    Occasionally stir.

    Serve with hot steaming white jasmine rice.
