Chicken Cheesy Casserole

Ingredients & Directions
  • Boil 1 whole chicken

  • strip the meat
    save the stock (or buy a whole roasted chicken & use 4-5 cups canned stock)

  • Add to stock & cook for 5 mins

  • 1c canned tomatoes
    1 chopped green pepper
    1/2 chopped onion

  • Add 1lb elbow spaghetti until almost done. (note this is not regular spaghetti nor is it regular elbow macaroni)

  • Add cut up chicken & 1 can mushrooms to mixture.
  • Slice 1 1/2lbs Velveeta cheese.

  • Layer elbow spaghetti mixture & cheese.

  • Bake 350 degrees 30-45 mins or until cheese is thoroughly melted. Stir often to melt cheese.

Makes two 2-qt casseroles.


Appox 42 carbs per 1/2c

This is a huge casserole, great for when you're feeding a lot of people. I often put it in smaller casseroles and freeze them.
